Whole wheat and Oats crust with Gajrela panna cotta and fresh fruits
Ingredients for crust-
1 cup-whole wheat flour
1/4 cup -rolled oats
½ cup -cold butter
4 tbsp-gur/jaggery powder
4 tbsp-ice cold water
In a food processor, combine the whole wheat,oats,butter and gur and mix.
It should look like bread crumbs.
Now, add water until all the ingredients are combined.
Roll it and cut into roundels with a cookie cutter. Chill it for 30 min and then bake it in preheated oven at 180 degrees C for 20 minutes.
Gajrela panna cotta ingredients
200 gm grated carrot
100g sweetened condensed milk
5g crushed cardamom
1g agar agar powder
50ml fresh cream
20 ml water
Heat carrots in a heavy bottom pan until soft and then add milk and let it cook in milk for 10 minutes. When the milk is reduced by 90 %, then add the condensed milk and cardamom powder. Now cook it for 2-3 min and turn off the heat. Let it cool and then blend it with cream. Now mix agar and water and put it on the heat. When it boils, mix it in the gajrela and cream mixture. Now pour it into silicon molds and keep it in the fridge for 4-5 hours to set.
Place the wheat and oats crust on the plate and put the gajerela dome on it and decorate it with some seasonal and exotic fruits.
