Today's fridge clear out brunch includes grilled flat mushroom & beef tomato, pan fried chorizo & egg, toasted sourdough and some spinach & watercress. All finished off with some chopped spring onion 🍞🍄🍳 I highly recommend these types of meals at least once a week, to help cut down on food waste ✌
Also, you might create something that tastes even better than if you'd followed a recipe 😉
So @wodenstone has sculpted and cast a beautiful pewter frame for me to paint on and I absolutely love it! Of course I painted a bolete mushroom first, what goes better with acorns and oak leaves than that?😄 I still need to varnish it and add a little chain to hang it with. If Wodenstone gets a spare minute to cast more of these lovely frames, I might paint a little collection.☺️

Did you know that January is national soup month? You can step up your soup game by using bone broth as your stock. One of my favorites is Creamy Mushroom Soup. (And it’s dairy free) 1 tablespoon avocado oil
1 white onion, diced
1 (8 oz) package baby bella mushrooms, roughly chopped
6 cloves garlic, minced
1 teaspoon fresh thyme, chopped
1 teaspoon sea salt, *Duxbury sea salt is what we prefer
1/4 teaspoon freshly ground black pepper
¼ teaspoon crushed red pepper flakes, (adjust to taste or omit)
2 tablespoons of coconut aminos
1 1/2 cups The Hale Bone Broth
1 cup coconut milk, canned and full fat (mix well after opening)
Add oil to a dutch oven or heavy soup pot over medium heat, then add onions, mushrooms and a pinch of salt.
Saute for 10-12 minutes or until onions are translucent and mushrooms are soft.
Add garlic and serrano pepper and cook for minute, then add the spices. After another minute or so, add coconut aminos to deglaze the pot.
Cook for 5 minutes, stirring occasionally, then add beef bone broth and coconut milk.
Let the mixture simmer for about 10 minutes. Blend the creamy mixture in a blender or with an immersion blender. "Gliophorus psittacinus is widely distributed in grasslands in Western Europe, Iceland, Greenland, the Americas, South Africa and Japan, being found in late summer and autumn. In Europe it is apparently in decline due to the degradation of habitats. .
Despite its small size and being coated in a sticky substance, Gliophorus psittacinus is often listed as edible in mushroom guides, inedible in others. Consumption of over 20 specimens in one sitting, however, can cause gastrointestinal disorders."
