Fresh everyday green if nothing else is available or worse comes to worse even powdered regular off the counter does it too.
But there’s nothing that can beat the mother of all chillies - it’s called Bhoot Jholokia in Assam, Umorok in Manipur, Raja Mirchi in West Bengal and by varied other names I am not aware of in various north eastern states.
The one on display here is the preserved pickled version of the best of all called Dalle Khorsaani in Darjeeling, Kurseong, Kalimpong, Siliguri, Nepal, Tibet and Bhutan. The best of all the appetisers personally for me and thousands in the places I mentioned earlier. The best in terms of fragrance and heat in perfect balance has to be this and is best if grown at higher altitudes. The ones grown in the plains has the texture and look but absolutely no taste whatsoever.
