Friday @sparrowmarket in @kerrytownshops I got thick, bone-in #pork chops. Saturday I watched America’s Test Kitchen on public TV and Detroit’s Elle Simone cooked deviled pork chops. Sounded good, so I used it last night. I didn’t have the recipe (until today), but I modified what I remembered. She used a nontraditional recipe: browned #panko breadcrumbs in #butter til golden. Mixed #Dijon, brown sugar, dry mustard, #garlic, and #cayenne. Coated chops with this, topped with the toasted panko, then baked @275° for 40-50 mins. The low temp was designed to keep the chops moist but cook them evenly. I coated the chops with S & P as they sat to dry brine. I mixed coarse, stone-ground mustard, dark brown sugar, #smoked paprika, and #honey. Spread this over the chops and topped with plain panko. I roasted @450° but immediately reduced oven to 350°. Checked the pork after 20 mins: instant-read thermometer read 130°, so I turned oven off and left them in for about 10 mins. The pork was delicious! Tender, juicy, and very flavorful - both pork and topping. The Bread & Butter Chardonnay was a great accompaniment. Intense fruit, complementary oak, balanced acidity. While in Dijon last semester, I took four classes - French, History, Art History, and Modern France. I had an amazing time learning about France and its history. In addition, living in France allowed me to learn about and embrace a new culture. It feels like I learned as much outside the classroom as I did inside the classroom! One of the reasons I learned so much outside of the classroom was because of my host family. Like all of the families in the program, my host family was so nice and cared about me. I played tennis with my host mom and host grandfather, went on a hike with the family, went to numerous family lunches, baked madeleines, and had wonderful discussions around the living room fire. - Lukas ‘22
